We eat bitter herbs on Passover to recall the bitterness of slavery.

Before we taste the bitter herb, horseradish, we say the blessing for eating it:

Baruch atah adonai, eloheinu melech ha-olam, asher kidshanu b'mitzvotav, v'tzivanu al achilat maror.

Thank you, farmers, for growing horseradish in the ground. 

Thank you,  horseradish, for being so strong! Our sinuses are clear now.
