This is in memory of the custom introduced by Hillel in Temple days. Rabbi Hillel would put together a piece of the Passover lamb, matzah and bitter herb and eat all three together, so as to do exactly what the Torah says about the Passover lamb, "They shall eat it upon matzah and bitter herb." (Numbers 9:11) Perhaps it is more than what appears. Hillel's practice of Korech implies that part of living is to taste our freedom even in the throes of oppression, and to always realize the
oppression of others even when we ourselves are free.
