Here is the backstory (no pun intended) behind why we save the middle matzah. When the Jewish people were fleeing Egypt and Pharaoh they brought matzah with them. They put three pieces of matzah on their backs as they fled. The reason we save the middle piece of the matzah for dessert is that, while they were fleeing, the matzah on the bottom was pressed against their backs and got too sweaty and soggy to be good, and the matzah on the top was harshly burnt by the hot Sinai desert sun. Although the Jewish people ate all the matzah, good and bad, they always saved the best for last. This was always the middle piece, perfectly cooked and accented with their salty sweat. This is why on Passover we save the middle matzah for last.
